Haggis and Neeps

Place the Haggis in a pan and cover with water. Bring to the boil and immediately reduce the heat and simmer, covered, for three hours. Avoid boiling vigorously as this will burst the skin.
Peel & chop the potatoes, then boil in a pan until cooked.
Peel & chop the turnips & swedes, then boil together in another pan until cooked.
Mash the potatoes with butter & milk, then add ground black pepper to taste.
Mash the turnips & swedes together with butter, and add ground black pepper to taste.
For added flavour, you can add some nutmeg to the potatoes and allspice to the turnip/swede.
Serve up at your traditional Burns Night supper and enjoy with a good whisky.
