Casterbridge Beef - only the best is good enough for our top chefs
Broad Stripe Butchers' sister company Fairfax Meadow has been an official supporter of The Roux Scholarship for some years. The world-famous Roux Scholarship (www.rouxscholarship.co.uk) is the UK’s leading competition for young chefs. It is in its 24th year and has a host of famous judges including, as well four members of the Roux dynasty, Gary Rhodes, Brian Turner, Heston Blumenthal, David Nicholls and Andrew Fairlie.
The winner of the competition wins, among other things, £3,000 cash and a three month “stage” (or training) at a three star Michelin restaurant in Europe or the United States. Once a Roux Scholar, always a Roux Scholar and the Scholars meet up to go on educational trips to places such as Tuscany. Sat Bains, whom many of you will have seen in The Great British Menu on our TV screens recently, is also a Roux Scholar, and Bryn Williams was once a finalist. As you can imagine, competition to win this title is extremely fierce in the catering fraternity.
At the 2007 finals the six finalists were asked to cook a classic Escoffier dish -Tournedos Rachel - and serve it with a classic Roux Bordelaise Sauce. The beef fillet was supplied by Fairfax Meadow and we were absolutely delighted when Michel Roux, OBE told the audience (of some 350 top names in the UK catering industry no less!), that it was some of the finest he had ever tasted. The beef they cooked at the finals was Casterbridge Beef™ from Fairfax Meadow – and this is exactly the same beef which is supplied to customers ordering beef from Broad Stripe.
The 2007 Roux Scholar is Armand Sablon from Galvin at Windows at the Hilton Hotel in Park Lane, London. He and the other five finalists have won, as well as a host of other fantastic prizes, a one day course with our butchers.
