Selecting the right source is just the beginning of the process to guarantee quality meat. Once our farmers and cattle have been selected and the purchase made, we then mature the meat to ensure that natural processes tenderises each primal joint.
Using his experience the master butcher will select those cuts that are just right and prepare your meat as you've ordered. This is where all his skills are used to provide you with meat that he will personally put his name to.
He’ll look to make sure that the matured muscle is beautifully marbled, ensuring the meat will not only be tender, but succulent too (see below). He trims the meat to provide you with just the cut of meat you asked for – so there’ll be no waste.
